Chicken Shashlik in Nut Marinade
In Russia, walnuts have been part of the diet for centuries. In this barbecue recipe the marinade for chicken is made with walnuts, garlic and lemon juice. Aromatic, spicy and tender, this chicken shashlik is a special treat.
|500 g (=1.1 lb)||chicken breast|
|1 bunch||green (spring) onions|
|1/2||lemon (just juice)|
|50 g (=1/2 cup)||ground nuts (walnuts are especially popular in Russia. But you can use peanuts.)|
|2 tbsp||oil (for best flavour choose a nut oil that fits to the nuts used in the marinade)|
|salt and pepper|
- Finely chop green onions, grind nuts and mix well. Add oil and garlic crashed in a garlic press. Mix well again.
- Cut chicken into cubes (5-6 cm (=2 inches)). Season to taste with salt and pepper. Rub marinade into chicken cubes.
- Refrigerate for about 30 minutes.
- Thread chicken cubes onto skewers and grill. Serve with hot tomato sauce.
