Recipe Russian Apple Pie Sharlotka – quick and almost fat-free (no butter)

Ingredients
500 g (=1.1 lb) apples
150 g (= 1.2 cup) flour
180 g (= 1 cup) sugar
3 eggs
  baking soda

Directions

  1. Blend eggs and sugar until light and frothy. Add flour and a pinch of baking soda. Blend until smooth and creamy.
  2. Peel and core apples. Slice thinly.
  3. Grease a baking pan. Pour in 2/3 of the batter, arrange apple slices on it and cover with the remaining batter.
  4. Preheat oven to 180C/355F and bake for about 30 minutes. Allow to cool before taking out of the baking pan.
