Plum Cake

There are different kinds of plums growing in Russia. They differ in taste and shape depending on the region. In the south of Russia, some varieties of plums ripen in July. In central Russia, fresh plums can be harvested from mid-August to mid-September. In Russian, plum is called "слива" [ßlíwa]. This moist cake made with fresh plums is a real treat.

Ingredients
250 g (= 2 cups) flour
180 g (= 6 oz) butter
180 g (=1 cup) sugar
4 eggs
2 tsp baking powder
1 tsp vanilla powder
1 kg (=2.2 lb) plums
powdered sugar and cinnamon

  1. Beat soft butter with sugar and vanilla powder.
  2. Blend in eggs one after another and mix well each time.
  3. Add flour and baking powder and mix until thick and creamy.
  4. Grease a baking pan (26-28 cm (=10-11 inch)). Spread dough over the bottom of the baking pan.
  5. Halve and pit plums. Cover dough with plum halves.
  6. Preheat oven to 150C/300F. Bake cake for about an hour. If the surface gets too brown, cover with aluminium foil.
  7. Allow to cool, sprinkle with powdered sugar and cinnamon.
