Potato Salad with Radish

In Russian cuisine, potato is often used as an ingredient for salads. New potatoes with its thin skin and fine flavor would be the best choice for this refreshing salad with radishes and cucumbers. This salad is great to accompany a barbecue. It can also be taken to a picnic or simply eaten as a main dish at home.

Ingredients (serves 4)
500 g (=1.1 lb) potatoes
1 cucumber
1 bunch radish
2 stalks green (spring) onion
Dressing:
1 tbsp oil
2 tbsp wine vinegar
1 tbsp mustard
2 tbsp fresh herbs
salt, pepper

Directions

  1. Cook potatoes in their own skins, allow to cool and peel.
  2. Cut potatoes, cucumber, radish and green onion into pieces and put everything in a bowl.
  3. Blend together oil, vine vinegar, mustard, salt and pepper. Add fresh herbs.
  4. Pour the dressing over the vegetables, mix gently and let stand at least 2-3 hours.

Tip:
If refrigerated for 2-3 hours the potato salad can be a great refreshment on hot summer days!
